I don't think it would look good on anything but white and possibly gray. I would actually like it on gray cause my cat fur wouldn't get on it or show.

The benefit of doing this shirt on a black or white fabric is that the shirt can act as you black or white color (or if you do it on red, then the red can be the blood). This means it can be a 2-color design.

If you do it on any other color, you need to pay for 3-colors.

Charcoal is very dark, it's decent at hiding stains, but keep in mind it is so dark that black ink is a bit tough to see on it, so you'd have to go with that inverted design (the second mockup) if you did it.

The lighter shirts you could get away with something closer to your original color scheme of black text.
