I went to some yupster/boho pub the other day and they put some fancy cheese on my burger.

Now don't get me wrong I love a fancy cheese

But they are terrible on burgers

For the cheeseburger give me the American cheese they make from cow eyeballs and sheep testicles

It's warm, it's creamy, it doesn't interfere with the burger

None of this blue cheese/gruyere bullshit

Fuck you fancy cheese

I went to the Mars Cheese Castle once. Never seen so much cheese in my life. Got some garlic gouda and the best colby jack ever. Wisconsin do't fuck around with the cheese, beer and sausage.



I'm usually not a fan of fancy cheese on my burgers. American or cheddar all the way but at the Spotted Cow in Waitsfield VT I had a burger with cheese curds. Dont remember exactly which cheese it was but it was fucking amazing.

The cheese should not overpower the flavor of the burger, but complement it. Your burger should be excellent as a stand-alone, or else get out of the burger business. A good sharp cheddar is usually a safe bet, but once in awhile, I don't mind a nice blue cheese or gorgonzola as long as it's not completely smothered.

I had a pizza out in Wisconsin once with some of that authentic state cheese on it... if it was made in New England with the regular cheese of around here, it would have been average at best, maybe even subpar. But this shit took it over the top. Super thick, super flavorful, you can fucking feel yourself getting a heart attack just consuming it. The stereotype about everyone being so fat there was brought into a whole new light.
