With a handful of shows(simpsons, family guy, Seinfeld, stargate, etc) most shows should stop at season 3
season 5 of The Shield is the greatest single season of TV ever IMO, so I would say some shows can keep it fresh....or at least recover, like the aforementioned Weeds
As much as I hate to say it because it was one of my favorite shows of all time I have to say "Nip/Tuck." Basically as soon as they left Miami to go to California that's when the creditability and story lines of the show plummeted. All the twists and turns seemed forced in the newer seasons.
new season starts in June...they have 2 more seasons left and are planning on having the series finale on Sept. 11, 2011
as far as Rescue Me goes, season 5 was definitely subpar, but its because it was WAY too long, and the writers ended up dragging out stories because of it....although the end of the season was fantastic
X-Files had a long run but I thought it was strong to the end.

i just downloaded and watched all the xfiles seasons. they didnt get good untill season 2.. i thought i remember the last 2 seasons sucking without molder but they were awesome!! oh well.. also, i say "Jumping the shark" all the time, i had no idea it was a literal term
How about shows that ended WAY too early for no explicable reason:
Freaks and Geeks
Lucky Louie
How could I forget Feaks and Geeks!? So pissed they never finished that one.
Lucky Louie was great too. Man, did I want to fuck his wife! hahaha.
Lucky Louie was great, but at least the episode that ended the season is also a good end to the series. However short it may have been.
Twin Peaks needed another season, so much up in the air at the end.
